Chicken and Seasoning
- 1 ½ pounds boneless skinless chicken thighs and breasts (combination of both)
- 1 cup water
- 1 tsp chicken bouillon
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp seasoned salt
- ½ tsp oregano
- ½ tsp black pepper
Slider Assembly
- 1 large package (16 rolls) Hawaiian rolls
- Monterey Jack cheese (quantity as desired, enough to cover sliders)
- 2 Tbsp butter, melted
- ¼ tsp garlic salt
White BBQ Sauce
- 1 cup mayonnaise
- ¼ cup apple cider vinegar
- 1 Tbsp lemon juice
- 1 ½ tsp Worcestershire sauce
- 1 tsp black pepper
- ¾ tsp kosher salt
- ½ tsp cayenne pepper
- ½ tsp horseradish
Instructions
- Make the BBQ sauce: In a medium bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, Worcestershire sauce, black pepper, kosher salt, cayenne pepper, and horseradish until well combined. Cover and refrigerate. This recipe makes about twice the amount needed, perfect for leftovers.
- Prepare chicken in Instant Pot: Place chicken thighs and breasts, water, chicken bouillon, garlic powder, onion powder, seasoned salt, oregano, and black pepper into the Instant Pot. Secure the lid and ensure the valve is set to sealing.
- Pressure cook chicken: Set the Instant Pot to manual/pressure cook mode for 12 minutes if using fresh chicken or 15 minutes if using frozen. Once cooking is complete, let the Instant Pot naturally release pressure for 10 minutes, then carefully move the valve to venting to release any remaining pressure. Remove the lid.
- Chop chicken: Use tongs to transfer the cooked chicken to a cutting board. Chop into small pieces with a large knife.
- Prepare slider rolls: Using a large serrated knife, slice the Hawaiian rolls in half lengthwise. Arrange the bottom halves on a baking sheet.
- Assemble sliders: Evenly distribute the chopped chicken over the bottom halves of the rolls. Drizzle the white BBQ sauce over the chicken, then layer slices of Monterey Jack cheese on top. Cover with the top halves of the rolls.
- Prepare butter topping: In a small bowl, combine melted butter and garlic salt. Brush this mixture over the tops of the slider rolls using a pastry brush.
- Bake sliders: Cover the baking sheet with foil and bake at 350°F (175°C) for 15 minutes. Then remove the foil and bake for an additional 5 minutes until rolls are golden and cheese is melted.
- Serve and enjoy: Remove the sliders from the oven, allow to cool slightly, then serve warm and enjoy your delicious Alabama Chicken Sliders.

- The white BBQ sauce can be made ahead and stored in the refrigerator for up to one week.
- Using a combination of chicken thighs and breasts adds both tenderness and lean protein.
