Description

  • 1-2 large baking potatoes, washed and cubed

Cheese & Dairy

  • 1 (200g) block of feta cheese

Herbs & Spices

  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper

Other Ingredients

  • 2 tbsp olive oil (divided)
  • 1 head of garlic, top cut off
  • 1 lemon, quartered
  • 1 tbsp honey


Instructions

  1. Preheat Oven: Preheat your oven to 390°F (200°C) to prepare for baking the potatoes and feta.
  2. Prepare Potatoes: Wash and cube the large baking potatoes into bite-sized pieces and place them evenly in a baking dish.
  3. Season Potatoes: Sprinkle the potatoes with dried thyme, dried oregano, salt, and black pepper. Drizzle with 1 tablespoon of olive oil and toss to coat the potatoes evenly with the herbs and oil.
  4. Add Feta and Aromatics: Place the block of feta cheese in the center of the baking dish, surrounded by the seasoned potatoes. Add the head of garlic with the top cut off and the lemon quarters around the dish. Drizzle a little more olive oil over everything.
  5. Bake: Bake in the preheated oven for 45-55 minutes until the potatoes are golden and crispy on the outside and tender inside.
  6. Mash Garlic: Remove the garlic head from the dish, squeeze out the softened garlic cloves, and mash them into the potatoes to infuse them with rich roasted garlic flavor.
  7. Combine and Serve: Mash the baked feta cheese and mix it thoroughly into the potatoes and garlic. Add a squeeze of fresh lemon juice to brighten the flavors. Optionally drizzle with honey and garnish with fresh basil before serving.
