  3. Mix Marinade: In a bowl, whisk together bourbon, brown sugar, olive oil, salt, black pepper, thyme, and lemon juice until the brown sugar is mostly dissolved, creating a flavorful marinade.
  4. Marinate Salmon: Pour half of the marinade over the salmon fillets, coating them well. Reserve the other half for later. Allow the salmon to marinate for about 10 minutes to absorb the flavors.
  5. Prep Peaches: Slice the ripe peaches and arrange them around the salmon in the baking dish, integrating them into the dish for roasting.
  6. Add Remaining Marinade: Drizzle the reserved marinade evenly over the peaches to ensure they are well coated and will caramelize during baking.
