Scale
Base Ingredients
- 2 1/2 cups shredded coconut, unsweetened
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
Optional
- 2 tablespoons almond flour (optional for added texture)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper to prevent sticking.
- Mix Ingredients: In a large mixing bowl, combine the shredded coconut, honey or maple syrup, melted coconut oil, vanilla extract, and salt. Stir thoroughly until all ingredients are well incorporated.
- Add Almond Flour (Optional): If you choose to use almond flour for extra texture, add it to the mixture and mix until evenly combined.
- Prepare Baking Pan: Pour the coconut mixture into your prepared baking pan. Press down firmly with the back of a spoon or your hands to form a compact, even layer.
- Bake: Place the pan in the oven and bake for 15-20 minutes. Look for golden brown edges and a lightly browned top as signs that the bars are done.
- Cool and Serve: Remove the pan from the oven and allow the bars to cool completely. Once cooled, cut into squares or bars for serving.
Notes
- Use parchment paper to make removing the bars easier and prevent sticking.
- If you prefer vegan options, use maple syrup instead of honey.
- Store bars in an airtight container at room temperature for up to one week or refrigerate for longer freshness.
- The almond flour is optional but adds a nice texture and slight nutty flavor.
