Ingredients
For the Chicken and Broccoli:
- 2 cups cooked chicken, shredded or cubed
- 3 cups fresh broccoli florets, steamed
- 1 cup shredded Parmesan cheese
For the Sauce:
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 ½ cups milk
- ½ cup chicken broth
- ¼ cup dry sherry
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon Dijon mustard
- ½ cup sour cream
For the Topping:
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs
- 2 tablespoons melted butter
Instructions
Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
Prepare the Broccoli and Chicken: Steam the broccoli until tender but still vibrant. Arrange the cooked broccoli and chicken evenly in the baking dish.
Make the Sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden and bubbly.
Add the Liquids: Gradually whisk in the milk, chicken broth, and sherry. Stir continuously until the sauce thickens, about 3-5 minutes.
Season the Sauce: Add garlic powder, onion powder, salt, black pepper, and Dijon mustard. Remove from heat and stir in the sour cream and 1 cup of Parmesan cheese.
Assemble the Casserole: Pour the creamy sauce over the chicken and broccoli, spreading evenly.
Prepare the Topping: In a small bowl, mix breadcrumbs, melted butter, and ½ cup Parmesan cheese. Sprinkle over the casserole.
Bake: Place in the preheated oven and bake for 20-25 minutes, or until golden and bubbly.
Serve: Let it rest for 5 minutes before serving. Enjoy with rice, pasta, or a fresh salad!
Notes
- Substitute Greek yogurt for sour cream for a lighter version.
- Add cooked rice or pasta directly to the casserole for a one-dish meal.
- For a crunchier topping, use crushed Ritz crackers instead of breadcrumbs.
- Try using Gruyère or cheddar instead of Parmesan for a different flavor twist.
