Ingredients
Scale
Egg Mixture
- 4 large eggs
- 1 cup warm water
- 1/4 teaspoon salt
Other Ingredients
- 1/2 cup soft or silken tofu, cubed
- 1 teaspoon light soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon chopped green onions
- Optional: dash of white pepper or chili oil for garnish
Instructions
- Beat the eggs: In a mixing bowl, gently beat the eggs until smooth but not foamy to ensure a delicate texture.
- Mix with water and salt: Add warm water and salt to the beaten eggs, stirring gently to combine without creating bubbles.
- Strain mixture: Pour the egg mixture through a fine mesh sieve into a shallow, heatproof dish to achieve a silky custard texture.
- Add tofu: Gently incorporate the cubed soft tofu into the egg mixture, distributing it evenly.
- Cover dish: Cover the dish tightly with foil or a heat-safe lid to prevent water droplets from falling onto the surface during steaming.
- Steam the custard: Place the dish in a steamer set over medium-low heat and steam for 10–12 minutes, or until the eggs are just set with a smooth, custard-like consistency.
- Rest: Remove from the heat and let it sit for 1–2 minutes to allow the custard to stabilize.
- Garnish and serve: Drizzle with light soy sauce and sesame oil, then sprinkle chopped green onions on top. Optionally, add a dash of white pepper or chili oil before serving.
Notes
- For extra flavor, add a few drops of oyster sauce or a spoonful of dried shrimp before steaming.
- Use very low heat during steaming to achieve a smooth, jiggly texture; avoid rapid boiling to prevent curdling.
- This dish works well as a light side or a comforting main served with steamed rice.
