Chicken Marinade
- 2 boneless (skinless) chicken breasts
- 2 tablespoons olive oil

- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
Burrito Assembly
- 4 large flour tortillas
- 1 cup cooked white or brown rice
- 1 cup black beans (drained and rinsed)
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup corn kernels (optional)
- 1/4 cup chopped cilantro (optional)
- 1/2 cup chipotle ranch dressing
Instructions
- Marinate chicken: In a bowl, combine olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add the chicken breasts and coat them thoroughly with the marinade. Cover and let them marinate for at least 15 minutes to absorb all the flavors.
- Grill chicken: Preheat the grill to medium-high heat. Place the marinated chicken breasts on the grill and cook for 6 to 8 minutes on each side, or until the chicken is fully cooked through and has nice grill marks. Remove from the grill and let the chicken rest for a few minutes before slicing into strips.
- Assemble burritos: Lay a large tortilla flat on a clean surface. Arrange a layer of cooked rice, followed by black beans, sliced grilled chicken, shredded cheese, lettuce, diced tomatoes, and optional corn kernels and cilantro.
