- 1 tablespoon olive oil

- 2 cloves garlic, minced
- 1 tablespoon aji amarillo paste (adjust for spice level)
- 1 teaspoon aji churu (or any spicy chili sauce)
- ½ teaspoon cumin
- ½ teaspoon paprika
- 1 cup chicken broth
- ½ cup heavy cream (or evaporated milk for a lighter option)
- ½ cup grated Parmesan cheese
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
Prepare the Chicken:
- Season the chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for about 3-4 minutes per side until golden brown. Remove and set aside.
Sauté the Aromatics:
- In the same pan, add chopped onion and garlic. Sauté until softened, about 2 minutes.
Make the Sauce:
- Stir in the aji amarillo paste, aji churu, cumin, and paprika. Cook for 1 minute to release the flavors.
- Pour in the chicken broth and bring to a simmer.
Simmer & Blend:
- Return the chicken to the pan and let it simmer for 10-12 minutes, allowing the flavors to meld.
- Reduce heat to low and stir in the heavy cream and Parmesan cheese. Simmer for another 2-3 minutes until the sauce thickens.
Finish with Lime:
- Add lime juice and stir well. Adjust seasoning as needed.
Serve & Garnish:
- Serve hot over rice or with crusty bread. Garnish with fresh cilantro.
