    • 2 lbs boneless, skinless chicken breasts (or thighs), cut into strips
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 1 tablespoon olive oil
  • For the Amarillo Sauce:

    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tablespoon aji amarillo paste (adjust for spice level)
    • 1 teaspoon aji churu (or any spicy chili sauce)
    • ½ teaspoon cumin
    • ½ teaspoon paprika
    • 1 cup chicken broth
    • ½ cup heavy cream (or evaporated milk for a lighter option)
    • ½ cup grated Parmesan cheese
    • 1 tablespoon lime juice
    • Fresh cilantro for garnish

Instructions

  1. Prepare the Chicken:

    • Season the chicken with salt and pepper.
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear the chicken for about 3-4 minutes per side until golden brown. Remove and set aside.
  2. Sauté the Aromatics:

    • In the same pan, add chopped onion and garlic. Sauté until softened, about 2 minutes.
  3. Make the Sauce:

    • Stir in the aji amarillo paste, aji churu, cumin, and paprika. Cook for 1 minute to release the flavors.
    • Pour in the chicken broth and bring to a simmer.
  4. Simmer & Blend:

    • Return the chicken to the pan and let it simmer for 10-12 minutes, allowing the flavors to meld.
    • Reduce heat to low and stir in the heavy cream and Parmesan cheese. Simmer for another 2-3 minutes until the sauce thickens.
  5. Finish with Lime:

    • Add lime juice and stir well. Adjust seasoning as needed.
  6. Serve & Garnish:

    • Serve hot over rice or with crusty bread. Garnish with fresh cilantro.
