Monkey Bread
- 12 frozen Rhodes Dinner rolls (thawed)
- 1/2 cup butter (melted)
- 1 Tablespoon light corn syrup
- 1 ¼ cups light brown sugar
- 2 teaspoons ground cinnamon

- 2 cups powdered sugar
- 2 Tablespoons butter (melted)
- 3 to 4 Tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat and prepare rolls: Preheat your oven to 350 degrees F. While the oven heats, cut each thawed Rhodes Dinner roll into six equal pieces. Set these pieces aside for coating.
- Mix coatings: In a medium bowl, combine the melted butter and light corn syrup. In another medium bowl, mix together the light brown sugar and ground cinnamon until well blended.
- Coat the dough pieces: Dip each roll piece first into the butter and corn syrup mixture, then roll it in the cinnamon and brown sugar mixture until fully coated. Arrange six coated pieces into each cup of a well-greased 12-cup muffin tin. Continue this process until all pieces are coated and placed in the tin.
- Bake: Place the muffin tin in the preheated oven and bake for 16 to 18 minutes, or until the rolls are golden and cooked through. Remove from oven and allow the rolls to cool in the tin for at least 20 minutes to let them set and prevent them from falling apart.
- Prepare vanilla icing: In a medium bowl, stir together powdered sugar, melted butter, milk (start with 3 tablespoons and add more if needed), and vanilla extract until smooth and reaching your desired consistency.
- Serve: Spoon the vanilla icing generously over the cooled mini monkey breads and enjoy these warm, gooey treats!
