Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy (about 2–3 minutes). Add the egg, vanilla extract, and almond extract (if using). Beat until well combined.
  4. Combine and Add Sprinkles: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the rainbow sprinkles gently.
  5. Form the Cookies: Roll the dough into 1 ½-inch balls and place them on the prepared baking sheets, spacing them 2 inches apart. Press a few extra sprinkles on top for decoration.
  6. Bake: Bake for 10–12 minutes, or until the edges are set but the centers are still soft. Do not overbake! Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
