Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup cottage cheese
  • ½ cup shredded cheddar cheese
  • 4 strips cooked bacon, crumbled
  • 2 green onions, sliced
  • Fresh parsley for garnish
  • Optional: hot sauce or sour cream for serving

Instructions

  1. Bake the Potatoes:
    Wash and dry the potatoes. Pierce each potato with a fork. Air fry at 400°F (200°C) for 35–40 minutes or until tender. Let them cool slightly.

  2. Prepare the Potato Skins:
    Cut the potatoes in half lengthwise and scoop out the insides, leaving about ¼ inch of flesh on the skin. (Save the scooped potato for another use, like mashed potatoes!)

  3. Crisp the Potato Skins:
    Brush the potato skins with olive oil and sprinkle with salt and pepper. Place them back in the air fryer, skin-side down, and cook at 400°F (200°C) for 5–7 minutes until crispy.

  4. Add the Toppings:
    Fill each potato skin with cottage cheese and sprinkle shredded cheddar on top. Return to the air fryer and cook for an additional 3–5 minutes until the cheese is melted.

  5. Serve:
    Top with crumbled bacon, green onions, and fresh parsley. Serve warm with optional hot sauce or sour cream on the side.

Notes

  • For a healthier version, substitute turkey bacon or skip the bacon entirely.
  • Cottage cheese can be replaced with Greek yogurt or sour cream for a creamier texture.
