- ½ cup shredded cheddar cheese
- 4 strips cooked bacon, crumbled
- 2 green onions, sliced
- Fresh parsley for garnish

Instructions
Bake the Potatoes:
Wash and dry the potatoes. Pierce each potato with a fork. Air fry at 400°F (200°C) for 35–40 minutes or until tender. Let them cool slightly.Prepare the Potato Skins:
Cut the potatoes in half lengthwise and scoop out the insides, leaving about ¼ inch of flesh on the skin. (Save the scooped potato for another use, like mashed potatoes!)Crisp the Potato Skins:
Brush the potato skins with olive oil and sprinkle with salt and pepper. Place them back in the air fryer, skin-side down, and cook at 400°F (200°C) for 5–7 minutes until crispy.Add the Toppings:
Fill each potato skin with cottage cheese and sprinkle shredded cheddar on top. Return to the air fryer and cook for an additional 3–5 minutes until the cheese is melted.Serve:
Top with crumbled bacon, green onions, and fresh parsley. Serve warm with optional hot sauce or sour cream on the side.
Notes
- For a healthier version, substitute turkey bacon or skip the bacon entirely.
- Cottage cheese can be replaced with Greek yogurt or sour cream for a creamier texture.
- Add jalapeños for a spicy kick!
