Instructions

  1. Saute Vegetables: In a dutch oven, heat the avocado or olive oil over medium heat. Add the diced yellow onion, red bell pepper, and carrots. Cook for 5-7 minutes until the vegetables are tender and slightly softened.
  2. Add Aromatics: Stir in the minced garlic, freshly grated ginger, and red curry paste. Cook for about 1 minute, stirring frequently until the mixture is fragrant and the spices are well combined.
  3. Cook Soup: Pour in the chicken broth or vegetable stock, coconut milk, and fish sauce. Season with salt and pepper to taste. Bring the soup to a simmer and let it cook gently for 5 minutes to meld the flavors.
  4. Add Noodles: Stir in the ramen or rice noodles and continue simmering until the noodles are tender, approximately 3-5 minutes depending on the noodle type.
  5. Finish Soup: Remove the pot from heat and stir in fresh lime juice and chopped cilantro to add a bright, fresh flavor to the soup. Serve hot.
