Ingredients
Scale
Chicken
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
Sauce
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Serving
- Cooked rice or pasta for serving
Instructions
- Heat the skillet: Heat 1 tablespoon of olive oil in a skillet over medium heat to prepare for cooking the chicken.
- Season and cook chicken: Season the chicken breasts with salt and pepper, then add them to the hot skillet. Cook for about 6-7 minutes on each side until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
- Sauté garlic: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant, taking care not to burn it.
- Add sun-dried tomatoes and spinach: Stir in the chopped sun-dried tomatoes and fresh spinach. Cook just until the spinach wilts, which should take a couple of minutes.
- Make the creamy sauce: Pour in the heavy cream and bring the mixture to a simmer. Let it cook to slightly thicken the sauce.
- Incorporate Parmesan cheese: Stir the grated Parmesan cheese into the skillet until it melts fully into the sauce, creating a rich and creamy texture.
- Combine chicken with sauce: Slice the cooked chicken breasts and return them to the skillet. Coat them evenly with the creamy Tuscan sauce.
- Serve: Serve the creamy Tuscan chicken over cooked rice or pasta, spooning extra sauce over the top for maximum flavor and enjoyment.
Notes
- Use sun-dried tomatoes packed in oil for added richness.
- For a lighter version, substitute half-and-half for heavy cream.
- Fresh spinach can be replaced with kale for a slightly different texture and flavor.
- This dish pairs well with garlic bread or a simple green salad.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
