Description

A delicious and easy Crock Pot Beef and Broccoli recipe featuring tender slices of beef slow-cooked in a savory soy-based sauce with tender broccoli florets. Perfectly paired with steamed white rice, this recipe offers a comforting and flavorful meal that’s effortless to prepare.

Ingredients

Scale

Beef and Sauce

  • 2 pounds sirloin steak or boneless beef chuck roast, sliced thin
  • 1 cup beef broth
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon sesame oil
  • 3 garlic cloves, minced

Thickening & Vegetables

  • 4 tablespoons cornstarch
  • 4 tablespoons water
  • 1 bag (12 ounces) frozen broccoli florets

To Serve

  • Cooked white rice (optional)

Instructions

  1. Prepare the sauce and beef: In the insert of a 6-quart crock pot (slow cooker), whisk together the beef broth, low sodium soy sauce, brown sugar, sesame oil, and minced garlic until well combined. Add the thinly sliced beef to the sauce and toss to coat all the pieces evenly.
  2. Slow cook the beef: Cover the crock pot with the lid and cook on low heat for 5 hours, allowing the beef to become tender and absorb the flavors of the sauce.
  3. Make the cornstarch slurry: In a small bowl, whisk together the cornstarch and water to create a slurry that will thicken the sauce.
  4. Thicken the sauce and add broccoli: Pour the cornstarch slurry into the crock pot and stir to combine with the beef and sauce. Add the frozen broccoli florets on top, gently stirring to mix the broccoli evenly. Cover and cook for an additional 30 minutes on low to cook the broccoli and thicken the sauce.
  5. Serve: Spoon the beef and broccoli mixture over warm cooked white rice, if desired. Enjoy your comforting crock pot meal!

Notes

  • Use sirloin steak for more tender meat, or chuck roast for more flavor.
  • Make sure to slice the beef thinly for quicker cooking and better texture.
  • Low sodium soy sauce is recommended to control the saltiness of the dish.
  • Adding the cornstarch slurry toward the end ensures the sauce thickens properly without lumping.
  • For a gluten-free version, substitute soy sauce with tamari or gluten-free soy sauce.
  • Cooked white rice is optional but traditional; you can substitute with brown rice or cauliflower rice for a healthier option.
