Description

These Easy Cheesy Breakfast Rolls are a delicious and convenient morning treat featuring fluffy scrambled eggs, melted cheddar and mozzarella cheeses, and savory bacon or sausage all wrapped in flaky crescent roll dough. Perfect for a quick breakfast or brunch, they bake golden in just 12 minutes making them an ideal warm and satisfying start to the day.

Ingredients

Scale

Dough

  • 1 can refrigerated crescent roll dough (or homemade dough)

Egg Mixture

  • 4 large eggs
  • 2 tbsp milk
  • Salt and pepper, to taste
  • 1 tbsp butter

Fillings

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 4 slices cooked bacon or sausage (beef or turkey bacon can be used as substitutions)

Garnish

  • 1 tbsp chopped chives or parsley
  • Additional melted butter, for brushing (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. Prepare Scrambled Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Melt butter in a nonstick skillet over medium heat, then pour in the egg mixture. Cook gently, stirring occasionally, until the eggs are just set but still soft. Remove from heat to avoid overcooking.
  3. Assemble Rolls: Unroll the crescent roll dough and separate it into triangles. Spoon some of the scrambled eggs onto the wide end of each dough triangle. Top with shredded cheddar, mozzarella cheese, and pieces of cooked bacon or sausage.
  4. Roll and Arrange: Roll up each triangle starting from the wide end towards the point, enclosing the filling. Place the rolls seam-side down on the prepared baking sheet. Optionally, brush the rolls with melted butter for extra browning and flavor.
  5. Bake: Bake the rolls in the preheated oven for 10 to 12 minutes or until they turn golden brown and the cheese inside is melted and bubbly.
  6. Garnish and Serve: Remove the rolls from the oven, sprinkle them with chopped chives or parsley for freshness, and serve warm for a comforting breakfast.

Notes

  • You can substitute bacon with cooked sausage, turkey bacon, or a vegetarian alternative as preferred.
  • If using homemade dough, ensure it is rolled thinly enough to bake evenly in the recommended time.
  • These rolls can be assembled ahead of time and refrigerated before baking; just add a few extra minutes to baking if baking from cold.
  • For a spicier kick, add diced jalapeños or a pinch of chili flakes to the egg mixture.
  • Use fresh herbs according to availability, parsley and chives both complement the flavors well.
