Ingredients
Scale
Dry Ingredients
- 1 cup All-Purpose Flour (can swap for whole wheat)
- 0.5 cup Almond Flour
- 1 teaspoon Baking Powder
- 1 pinch Salt
Wet Ingredients
- 3 pieces Ripe Bananas (mashed)
- 0.33 cup Maple Syrup (the star sweetener)
- 2 pieces Eggs (lightly whisked)
- 0.5 cup Unsalted Butter (melted)
Topping
- 0.5 cup Sliced Almonds (toasted)
- 0.33 cup Maple Syrup (optional drizzle)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper to prevent sticking.
- Mash Bananas: In a large mixing bowl, mash the ripe bananas thoroughly until they form a smooth consistency.
- Combine Wet Ingredients: Add the maple syrup, lightly whisked eggs, and melted unsalted butter to the mashed bananas. Mix well until all wet ingredients are fully incorporated.
- Mix Dry Ingredients: In a separate bowl, sift together the all-purpose flour, almond flour, baking powder, and salt.
- Combine Wet and Dry: Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing to keep the bake tender.
- Add Toppings: Fold in half of the sliced toasted almonds into the batter, then pour the batter into the prepared pan. Sprinkle the remaining toasted almonds evenly on top.
- Bake: Place the pan in the preheated oven and bake for about 50 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Drizzle: Remove the bake from the oven and allow it to cool in the pan for 10-15 minutes. If desired, drizzle the optional maple syrup over the top for added sweetness and shine.
- Serve: Cut into 8 equal slices and serve warm or at room temperature. Enjoy your homemade bliss!
Notes
- For a healthier twist, you can substitute whole wheat flour for all-purpose flour.
- Ensure bananas are very ripe for maximum sweetness and moisture.
- To toast almonds, spread them on a baking sheet and bake at 350°F for 5-7 minutes until golden and fragrant.
- Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
- Optional maple syrup drizzle adds extra sweetness but can be skipped for a lower sugar option.
