Description

Easy Pepper Steak is a quick and flavorful stir-fry dish featuring tender flank steak and crisp bell peppers in a savory garlic-ginger sauce. Perfect for a busy weeknight, this recipe delivers a delicious balance of sweet and savory notes in under 30 minutes.

Ingredients

Scale

For the Stir-Fry:

  • 2 tablespoons vegetable oil (divided)
  • 1 medium red bell pepper, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 1/4 pounds flank steak, thinly sliced
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger

For the Sauce:

  • 1/4 cup soy sauce
  • 1/4 cup chicken broth or water
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon black pepper (or more to taste)

Instructions

  1. Prepare the Sauce: In a small bowl, combine the soy sauce, chicken broth (or water), brown sugar, cornstarch, and black pepper. Stir well to dissolve the cornstarch and set aside for later use.
  2. Cook the Peppers: Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the sliced red and green bell peppers and cook for 2-3 minutes until they soften slightly but remain crisp. Remove the peppers from the pan and set aside on a plate.
  3. Sear the Steak: Add the remaining 1 tablespoon of oil to the pan. Place the thinly sliced flank steak in the pan and cook for 2-3 minutes until the outside is browned but the inside remains pink, indicating medium-rare doneness.
  4. Add Aromatics: Stir in the minced garlic and minced ginger with the steak. Cook for an additional 30 seconds until fragrant and aromatic, being careful not to burn the garlic.
  5. Combine and Thicken: Return the cooked bell peppers to the pan. Stir the sauce mixture again to ensure cornstarch is fully integrated, then pour it over the steak and peppers. Cook, stirring frequently, until the sauce thickens and coats the ingredients evenly.
  6. Serve: Transfer the pepper steak to a serving dish and enjoy immediately, optionally pairing with steamed rice or noodles.

Notes

  • For a gluten-free version, use tamari or a gluten-free soy sauce alternative.
  • Thinly slicing the flank steak across the grain ensures tenderness.
  • Add more black pepper if you prefer a spicier taste.
  • You can substitute chicken broth with water for a lighter sauce.
  • Serve with steamed rice, quinoa, or noodles to make a complete meal.
