Ingredients
Scale
Meat and Vegetables
- 1 pound ground beef
- 1 small onion, chopped
Seasoning and Add-ins
- 2 tablespoons taco seasoning (or more to taste)
- 14 ounces black beans, drained and rinsed
- 16 ounces salsa (your favorite variety)
Cheese and Garnishes
- 1 ½ cup shredded cheddar cheese, divided
- ¼ cup sour cream (for serving)
- ¼ cup chopped cilantro
- Tortilla chips (for serving)
Instructions
- Cook the ground beef: Heat a heavy-bottomed skillet over medium-high heat. Add the ground beef and cook for about 2 minutes, breaking it up as it cooks. Once browned, remove the meat from the skillet and set it aside.
- Sauté the onions: Return the skillet to medium heat. Add the chopped onions and cook for about 5 minutes until they become translucent, stirring frequently to avoid burning.
- Add seasoning and combine: Return the cooked ground beef to the skillet with the onions. Sprinkle in the taco seasoning and stir well to evenly coat the meat and onions.
- Incorporate beans, salsa, and cheese: To the skillet, add the drained black beans, salsa, and 1 cup of shredded cheddar cheese. Mix everything together so the cheese begins melting into the mixture.
- Broil the cheese topping: Sprinkle the remaining ½ cup of cheddar cheese evenly over the top of the skillet contents. Transfer the skillet to the oven and broil for a few minutes until the cheese is bubbly and golden brown. Watch carefully to prevent burning.
- Serve and garnish: Remove the skillet from the oven and serve immediately. Top with dollops of sour cream, a sprinkle of chopped cilantro, and tortilla chips on the side or crumbled on top. Enjoy this hearty and cheesy taco skillet!
Notes
- For a spicier dish, add extra taco seasoning or use a spicy salsa variety.
- You can substitute ground turkey or chicken for a leaner option.
- Try adding diced bell peppers or corn for extra veggies.
- If you don’t have an oven-safe skillet, transfer the mixture to a baking dish before broiling.
- Keep a close eye during broiling as cheese can burn quickly.
