Scale
Main Ingredients
- 1 bunch Regular Red Globe Radishes (or substitute with French Breakfast or Watermelon radishes)
- 1/4 cup Tahini (or sunflower seed butter for a nut-free option)
- 2 tablespoons Freshly squeezed Lemon Juice
- 1 clove Garlic (adjust to taste)
- 2 tablespoons Olive Oil (plus extra for drizzling)
- Salt, to taste
- Pepper, to taste
For Serving
- 1 cup Fresh Veggies (carrots, cucumbers, or bell peppers)
- 1 loaf Pita Bread (toasted)
- 1 tablespoon Sesame Seeds (for garnish)
Instructions
- Preparation and Roasting: Preheat your oven to 400°F (200°C). Trim the greens off the radishes and rinse them thoroughly under cold water. Place the radishes on a baking tray, drizzle with olive oil, and toss gently to coat evenly. Roast in the oven for about 20 minutes or until the radishes are fork-tender and slightly caramelized.
- Blending: Allow the roasted radishes to cool slightly, then transfer them to a food processor. Add tahini, freshly squeezed lemon juice, and garlic. While blending, slowly drizzle in olive oil to achieve a creamy texture. Blend until smooth, stopping to scrape down the sides if needed. Adjust consistency by adding more olive oil if necessary. Season with salt and pepper to taste.
- Serving: Transfer the hummus to a serving bowl. Drizzle with additional olive oil and sprinkle sesame seeds on top for garnish. Serve alongside fresh cut veggies like carrots, cucumbers, or bell peppers and toasted pita bread for dipping.
Notes
- For a nut-free version, substitute tahini with sunflower seed butter.
- Roasting radishes enhances their sweetness and mellows their peppery bite.
- Adjust garlic quantity to suit your taste preferences; starting with one clove is advisable.
- Use freshly squeezed lemon juice for the best flavor impact.
- Leftover hummus can be stored in an airtight container in the fridge for up to 3 days.
- To add extra flavor, consider sprinkling a pinch of smoked paprika or fresh herbs like parsley on top before serving.
