Ingredients

Scale

For the Brownie Layer:

  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

For the Cookie Layer:

  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup semi-sweet chocolate chips

Instructions

    1. Preheat & Prepare the Pan:

      • Preheat your oven to 350°F (175°C).
      • Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving some overhang for easy removal.
    2. Make the Brownie Batter:

      • In a mixing bowl, whisk together melted butter, granulated sugar, and brown sugar.
      • Add eggs and vanilla extract, whisking until smooth.
      • Sift in flour, cocoa powder, salt, and baking powder. Fold until just combined.
      • Pour the brownie batter into the prepared pan, spreading it evenly.
    3. Make the Cookie Dough:

      • In another mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
      • Beat in the egg and vanilla extract.
      • In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients.
      • Fold in the chocolate chips.
    4. Assemble the Brookies:

      • Drop spoonfuls of cookie dough over the brownie batter, gently pressing it down but not fully covering the brownie layer.
    5. Bake:

      • Bake for 30-35 minutes, or until the cookie layer is golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
      • Allow to cool completely before slicing into squares.
    6. Serve & Enjoy:

      • Cut into 9 or 12 squares and enjoy with a glass of milk!

Notes

  • For an extra chocolatey twist, add a handful of chocolate chips to the brownie layer.
  • If you prefer a crispier texture, bake for an additional 5 minutes.
  • Store brookies in an airtight container at room temperature for up to 4 days or freeze for up to 2 months.
  • Serve warm with a scoop of vanilla ice cream for an extra indulgent treat!
