Description

  • 1 lb ground beef
  • 1 small yellow onion, finely diced
  • 1/2 tsp salt

  • 1 cup shredded sharp cheddar cheese

For the Rollups and Topping

  • 68 medium flour tortillas
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh parsley
  • Cooking spray or oil (for greasing baking dish)


Instructions

  1. Cook the Beef Mixture: In a large skillet over medium heat, cook the ground beef and finely diced yellow onion until browned and softened, about 6–8 minutes. Drain any excess fat, then season the mixture with salt, black pepper, garlic powder, and smoked paprika. Let the mixture cool slightly.
  2. Combine with Cheese: Transfer the beef mixture to a bowl and stir in the shredded sharp cheddar cheese until well combined.
  3. Assemble Rollups: Lay out a flour tortilla and add 2–3 tablespoons of the beef-cheese mixture on one end. Roll the tortilla tightly around the filling. Repeat this process for all remaining tortillas and filling.
  4. Prepare Garlic Butter: Melt the unsalted butter in a small bowl and mix in the minced garlic and chopped fresh parsley, if desired.
  5. Preheat and Prepare for Baking: Preheat your oven to 375°F (190°C). Grease a baking dish or line a baking sheet with cooking spray or oil. Place the rollups seam-side down in the baking dish.
  6. Brush with Garlic Butter and Bake: Brush the rollups generously with the garlic butter mixture. Bake in the preheated oven for 15–20 minutes, or until the rollups are golden and crisp. For extra crunch, optionally broil for an additional 1–2 minutes.
