Description

These Healthy Matcha Truffle Bites are a delightful, guilt-free treat combining almond flour, matcha powder, and a creamy white chocolate coating. Naturally sweetened with maple syrup and enriched with coconut oil, these bite-sized truffles offer an antioxidant-packed, energy-boosting snack perfect for any time of day. Coated in melted white chocolate and decorated with festive toppings, they balance health and indulgence effortlessly.

Ingredients

Scale

Matcha Truffle Mixture

  • 1 ½ cups almond flour
  • 2 tablespoons matcha powder
  • 3 tablespoons maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Chocolate Coating & Decoration

  • 1 cup white chocolate chips or dairy-free white chocolate
  • 1 teaspoon coconut oil
  • Green sprinkles
  • Crushed pistachios
  • Shredded coconut
  • Gold sugar pearls

Instructions

  1. Make the matcha filling: In a mixing bowl, combine almond flour, matcha powder, and a pinch of salt. Add maple syrup, melted coconut oil, and vanilla extract, stirring thoroughly until the mixture forms a soft, well-incorporated dough.
  2. Roll into truffles: Using about 1 tablespoon of dough per truffle, roll the mixture into small balls with your hands. Place the balls on a parchment-lined tray and freeze for 15 to 20 minutes until firm and easier to handle.
  3. Melt the chocolate: In a microwave-safe bowl, melt the white chocolate chips together with coconut oil in 20-second increments. Stir well between intervals until you achieve a smooth, lump-free melted chocolate mixture.
  4. Coat the truffles: Use a fork or dipping tool to dip each chilled truffle fully into the melted chocolate. Gently tap off any excess chocolate and place the coated truffles back onto the parchment-lined tray.
  5. Decorate: Before the chocolate coating sets, generously sprinkle your chosen toppings such as green sprinkles, crushed pistachios, shredded coconut, or gold sugar pearls onto each truffle for a festive appearance and delightful texture.
  6. Chill to set: Refrigerate the coated truffles for 10 to 15 minutes to allow the chocolate to harden completely. Serve the truffles chilled or at room temperature for a softer texture.

Notes

  • Use dairy-free white chocolate chips to make this recipe vegan.
  • Freezing the truffles before coating helps them hold their shape and makes dipping easier.
  • Store the truffles in an airtight container in the refrigerator for up to one week.
  • Adjust the sweetness by adding more or less maple syrup according to your preference.
  • Chilling time may vary depending on your refrigerator’s temperature.
