Instructions
- Make the matcha filling: In a mixing bowl, combine almond flour, matcha powder, and a pinch of salt. Add maple syrup, melted coconut oil, and vanilla extract, stirring thoroughly until the mixture forms a soft, well-incorporated dough.
- Roll into truffles: Using about 1 tablespoon of dough per truffle, roll the mixture into small balls with your hands. Place the balls on a parchment-lined tray and freeze for 15 to 20 minutes until firm and easier to handle.
- Melt the chocolate: In a microwave-safe bowl, melt the white chocolate chips together with coconut oil in 20-second increments. Stir well between intervals until you achieve a smooth, lump-free melted chocolate mixture.
