Description

This easy homemade salsa recipe features a vibrant blend of diced tomatoes, Rotel with green chiles, fresh onion, jalapeño, garlic, cilantro, and a squeeze of lime juice. Pulsed to your preferred chunkiness, this flavorful salsa is perfect for dipping with tortilla chips, topping tacos, or enhancing your favorite Mexican dishes.

Ingredients

Scale

Vegetables and Herbs

  • 1 large can (28 ounces) diced tomatoes, drained
  • 2 cans (10 ounces each) Rotel (diced tomatoes with green chiles), drained
  • 1/2 cup chopped white onion
  • 1 clove garlic, minced
  • 1/2 to 1 small jalapeño, seeds removed and chopped
  • 1/2 cup cilantro, measured then chopped

Seasonings

  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground cumin
  • 1/4 tsp crushed red pepper flakes

Other

  • Juice from 1/2 a lime

Instructions

  1. Combine ingredients: Pour the drained diced tomatoes, Rotel, chopped onion, minced garlic, chopped jalapeño, sugar, salt, ground cumin, crushed red pepper flakes, chopped cilantro, and fresh lime juice into a blender or food processor. Give everything a good stir to mix ingredients evenly.
  2. Pulse to desired texture: Securely cover the blender or food processor with the lid. Pulse the mixture 8 to 10 times, depending on how chunky you prefer your salsa. Fewer pulses create chunkier salsa, while more pulses make it smoother. The recipe suggests pulsing about 8 times for chunkier consistency.
  3. Chill and blend flavors: Carefully pour the freshly blended salsa into a large bowl or container. Cover and refrigerate for at least two hours. This chilling time allows the flavors to meld and intensify, enhancing the salsa’s taste.
  4. Serve and enjoy: Once chilled, serve the salsa with tortilla chips or use it as a topping for tacos, grilled meats, or any dishes that could use a burst of fresh flavor.

Notes

  • For a spicier salsa, leave some jalapeño seeds in or add more jalapeño.
  • Adjust salt and sugar to taste to balance acidity and flavor.
  • Salsa can be stored in the refrigerator for up to 5 days.
  • Using fresh lime juice is recommended for the best flavor, but bottled lime juice can be used in a pinch.
  • If a smoother salsa is preferred, blend more times or longer.
