Description

A creamy, herb-scented skillet dish featuring butter beans simmered with smoked paprika, fresh herbs, and garlic. This comforting vegan side dish is easy to prepare and perfect for a satisfying weeknight meal.

Ingredients

Scale

Ingredients

  • 2 cups butter beans (canned or cooked; cannellini or great Northern beans are fine substitutes)
  • 2 tablespoons olive oil (extra-virgin gives better flavor)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano (or 1 tablespoon fresh, chopped)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1/2 teaspoon smoked paprika (regular paprika okay but less smoky)
  • Salt and pepper to taste
  • 1 cup vegetable broth (use low-sodium if you’ll add salt later)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the Skillet: Warm a large skillet over medium heat and add the olive oil, preparing it to sauté the aromatics.
  2. Sauté Onion: Add the chopped onion to the skillet and sauté, stirring occasionally, until soft and translucent, about 4–6 minutes.
  3. Add Herbs and Garlic: Stir in the minced garlic, oregano, thyme, and smoked paprika. Cook and stir for 30–60 seconds until fragrant to develop the flavors.
  4. Add Beans and Broth: Pour in the butter beans and vegetable broth, stirring to combine all ingredients evenly.
  5. Simmer: Reduce the heat to low and gently simmer the mixture for 10–15 minutes, stirring occasionally to prevent sticking. This allows the broth to reduce and beans to become creamy.
  6. Season: Taste the dish and season with salt and pepper as needed. Adjust herbs or paprika if desired to enhance the flavor.
  7. Garnish and Serve: Remove the skillet from heat and sprinkle chopped fresh parsley over the top before serving.

Notes

  • Canned butter beans can be substituted with cooked cannellini or great Northern beans.
  • Use extra-virgin olive oil for better flavor.
  • Low-sodium vegetable broth is recommended if you plan to add salt later.
  • Adjust smoked paprika to your preference for smokiness.
  • This dish is vegan and pairs well with crusty bread or a green salad.
