- 1 cup vegetable broth (use low-sodium if you’ll add salt later)
- Fresh parsley, chopped (for garnish)

- Heat the Skillet: Warm a large skillet over medium heat and add the olive oil, preparing it to sauté the aromatics.
- Sauté Onion: Add the chopped onion to the skillet and sauté, stirring occasionally, until soft and translucent, about 4–6 minutes.
- Add Herbs and Garlic: Stir in the minced garlic, oregano, thyme, and smoked paprika. Cook and stir for 30–60 seconds until fragrant to develop the flavors.
- Add Beans and Broth: Pour in the butter beans and vegetable broth, stirring to combine all ingredients evenly.
- Simmer: Reduce the heat to low and gently simmer the mixture for 10–15 minutes, stirring occasionally to prevent sticking. This allows the broth to reduce and beans to become creamy.
- Season: Taste the dish and season with salt and pepper as needed. Adjust herbs or paprika if desired to enhance the flavor.
- Garnish and Serve: Remove the skillet from heat and sprinkle chopped fresh parsley over the top before serving.
