For the Cake:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup plain kefir (room temperature)
- ½ cup unsalted butter (melted and slightly cooled)
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract
For the Glaze (Optional):
- 1 cup powdered sugar
- 2–3 tablespoons kefir
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
- In another bowl, whisk the kefir, melted butter, eggs, and vanilla extract until smooth.
- Gradually combine the wet ingredients with the dry ingredients, stirring gently until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely before adding the glaze.
- To make the glaze, whisk together the powdered sugar, kefir, and vanilla until smooth. Drizzle over the cooled cake.
- Slice and enjoy!
Notes
- For extra flavor, add a pinch of cinnamon or nutmeg to the batter.
- You can substitute whole milk for kefir, but kefir gives the cake a unique, tender texture.
