  • For the Cake:

    • 2 cups all-purpose flour
    • 1 cup granulated sugar
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • 1 cup plain kefir (room temperature)
    • ½ cup unsalted butter (melted and slightly cooled)
    • 2 large eggs (room temperature)
    • 1 teaspoon vanilla extract

    For the Glaze (Optional):

    • 1 cup powdered sugar
    • 23 tablespoons kefir
    • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, whisk the kefir, melted butter, eggs, and vanilla extract until smooth.
  4. Gradually combine the wet ingredients with the dry ingredients, stirring gently until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool completely before adding the glaze.
  8. To make the glaze, whisk together the powdered sugar, kefir, and vanilla until smooth. Drizzle over the cooled cake.
  9. Slice and enjoy!

Notes

  • For extra flavor, add a pinch of cinnamon or nutmeg to the batter.
  • You can substitute whole milk for kefir, but kefir gives the cake a unique, tender texture.
  • Serve with fresh berries or a dollop of whipped cream for an extra treat.
