Scale
Main Ingredients
- 4 large eggs
- 2 ripe avocados
- 1/2 cup melted butter
- 6 Tbsp unsweetened peanut butter
- 2 tsp baking soda
- 2/3 cup keto-friendly granulated sugar (such as Swerve)
- 2/3 cup unsweetened cocoa powder
- 2 tsp pure vanilla extract
- 1/2 tsp kosher salt
Optional Toppings
- Flaky sea salt (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the brownies.
- Mix Wet Ingredients: In a large mixing bowl, combine the eggs, ripe avocados, melted butter, and unsweetened peanut butter. Mix well until the mixture is smooth and uniform.
- Add Dry Ingredients: Add the baking soda, keto-friendly granulated sugar, unsweetened cocoa powder, pure vanilla extract, and kosher salt to the wet ingredients. Stir thoroughly until the batter is smooth with no lumps.
- Prepare Baking Pan: Grease a 9×9 inch baking pan lightly with butter or oil. Pour the brownie batter evenly into the prepared pan, smoothing the top with a spatula.
- Bake Brownies: Place the pan in the preheated oven and bake for 20 to 25 minutes. Check doneness by inserting a toothpick in the center; it should come out with a few moist crumbs but not wet batter.
- Cool Brownies: Remove the pan from the oven and allow the brownies to cool in the pan for about 10 minutes. Then carefully lift the brownies out to a wire rack and cool completely before slicing to ensure clean cuts.
- Optional Finishing Touch: If desired, sprinkle flaky sea salt over the top of the brownies before serving to enhance the rich chocolate flavor.
Notes
- Use ripe avocados for the best creamy texture and flavor in your brownies.
- If you don’t have keto-friendly sugar, erythritol or monk fruit sweeteners are good substitutes.
- Make sure not to overbake to keep brownies moist and fudgy.
- Store brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
- Feel free to add chopped nuts or sugar-free chocolate chips for extra texture.
