Description

This Keto Cajun Chicken Alfredo Pasta is a rich, creamy, and flavorful low-carb dish featuring blackened chicken served over heart of palm noodles. The Alfredo sauce is infused with garlic, creole seasoning, and Parmesan cheese, creating a perfect keto-friendly comfort meal ready in just 30 minutes.

Ingredients

Scale

Chicken

  • 16 ounces Blackened chicken

Sauce

  • 3 tablespoons Butter
  • 2 cloves Garlic (finely minced)
  • 2 cups Heavy Cream
  • 5 ounces Parmesan cheese (grated)
  • 1 tablespoon Creole seasoning

Pasta

  • 18 ounces Natural Heaven Heart of Palm noodles (drained)

Instructions

  1. Prepare the Blackened Chicken: Make the blackened chicken according to your preferred method before starting the sauce. You can also prepare it ahead of time and reheat before serving.
  2. Melt Butter and Sauté Garlic: In a pan over medium-high heat, melt the 3 tablespoons of butter. Add the finely minced garlic and cook for about 1 minute until fragrant without letting it brown.
  3. Simmer the Heavy Cream: Pour the heavy cream into the pan and bring it to a gentle simmer over medium-high heat. Stir often to prevent the cream from burning. This should take approximately 5 to 7 minutes.
  4. Add Parmesan and Creole Seasoning: Stir in the grated Parmesan cheese and Creole seasoning. Continue cooking the sauce for 8 to 10 minutes until it thickens enough to coat the back of a spoon.
  5. Combine Noodles and Warm: Remove the sauce from heat and add the drained Heart of Palm noodles into the sauce. Allow them to cook and warm through for about 5 minutes.
  6. Serve: Plate the creamy Alfredo noodles and top with thinly sliced blackened chicken. Serve immediately for best flavor.

Notes

  • Heart of Palm noodles are a great low-carb alternative to traditional pasta for keto diets.
  • You can adjust the Creole seasoning amount to taste for more or less spice.
  • If blackened chicken isn’t pre-made, you can quickly season chicken breasts with Creole seasoning and sear in a hot pan until cooked through.
  • Stir the sauce frequently to prevent burning and ensure even thickening.
  • For a dairy-free version, substitute heavy cream and Parmesan with keto-friendly dairy-free alternatives.
