Instructions

  3. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add chopped onion, sliced zucchini, and chopped bell pepper; sauté until the vegetables soften, about 5-7 minutes.
  4. Add Spinach and Season: Add fresh spinach to the skillet and cook until wilted, about 2 minutes. Season the vegetable mixture with salt, pepper, and Italian seasoning to enhance the Mediterranean flavors.
  5. Prepare Ricotta Mixture: In a mixing bowl, combine ricotta cheese, egg, half of the shredded mozzarella (1/2 cup), and half of the grated Parmesan (1/2 cup). Mix thoroughly to create a creamy cheese layer.
