Description
Loaded Potato Bites are crispy, cheesy, and savory appetizers made with halved baby potatoes stuffed with a flavorful cheddar cheese mixture, baked to perfection, and topped with sour cream and fresh chives for a delightful bite-sized treat.
Ingredients
Scale
Potatoes
- 1½ pounds baby potatoes, halved and hollowed
Cheese Filling
- 1 cup shredded cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup finely chopped green onions or chives (half for filling)
Other
- 2 tablespoons olive oil
- ½ cup sour cream
- Remaining ¼ cup finely chopped green onions or chives for topping
Instructions
- Preheat Oven. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
- Prepare Cheese Mixture. In a small bowl, combine the shredded cheddar cheese, salt, black pepper, and half of the chopped chives or green onions, mixing well to blend the flavors.
- Prepare Potatoes. Slice the baby potatoes in half and carefully scoop out the centers to create hollow shells. Arrange them cut-side up on the prepared baking sheet.
- Brush and Fill Potatoes. Brush each hollowed potato half with olive oil to promote crispness, then fill generously with the cheese and chive mixture.
- Bake Potatoes. Bake in the preheated oven for 20 to 25 minutes, or until the potatoes are crispy and the cheese filling is melted and bubbly.
- Add Toppings. Remove the loaded potato bites from the oven and immediately top each with a dollop of sour cream and the remaining chopped chives for freshness and contrast.
- Serve. Serve the loaded potato bites warm for the best taste and texture, perfect as a savory snack or appetizer.
Notes
- You can use other cheeses like mozzarella or pepper jack for a different flavor profile.
- Substitute sour cream with Greek yogurt for a healthier option.
- Adjust salt and pepper according to taste, especially if using salted cheese.
- These can be made ahead and reheated in the oven to maintain crispiness.
- For extra crispiness, sprinkle a little paprika or cayenne pepper on top before baking.
