- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 tablespoon brown sugar
- ยฝ teaspoon dried oregano
- ยฝ teaspoon ground coriander
- ยฝ teaspoon smoked paprika
- ยฝ teaspoon cayenne pepper (optional)
- Salt and ground black pepper, to taste
- 2 tablespoons vegetable oil
Other Ingredients
- 8 corn tortillas
- Sour cream, for topping
- Guacamole, for topping
- Cotija cheese, for topping
- Salsa, for topping
- Pickled red onions, for topping
- Chopped cilantro, for garnish
Instructions
- Prepare the Steak: Pat the sirloin steak dry with paper towels and cut it into bite-sized cubes to ensure even cooking.
- Make the Marinade: In a mixing bowl, combine chili powder, garlic powder, ground cumin, brown sugar, dried oregano, ground coriander, smoked paprika, cayenne pepper (if using), salt, and black pepper. Add the vegetable oil and toss the steak cubes in this spice mixture until fully coated. Let the steak marinate for 5 to 10 minutes to absorb the flavors.
- Sear the Steak: Heat a cast iron skillet over medium-high heat until hot. Add the marinated steak cubes and sear them for 1 to 2 minutes on each side, or about 3 to 5 minutes total, until they are browned on the outside but still juicy inside.
- Warm the Tortillas: Heat the corn tortillas in a separate skillet over medium heat or microwave them for about 20 seconds until warm and pliable.
- Assemble the Tacos: Place the seared steak cubes onto each warm tortilla. Top with sour cream, guacamole, crumbled Cotija cheese, salsa, pickled red onions, and a sprinkle of chopped cilantro to taste. Serve immediately for the best flavor and texture.
Notes
- For a spicier kick, increase the cayenne pepper to taste or add sliced jalapeรฑos as a topping.
- Ensure the skillet is hot before adding the steak to get a good sear and lock in juices.
- You can substitute sirloin with flank steak or skirt steak based on preference.
- Leftover steak can be stored covered in the refrigerator for up to 3 days and reheated gently before serving.
- For gluten-free preparation, confirm the tortillas are 100% corn and check toppings for added gluten ingredients.
