Ingredients
Scale
Filling
- 8 oz cream cheese, softened
- 3 tbsp unsalted butter, softened
- 2 1/2 cups powdered sugar
- 3/4 cup finely chopped dried cherries
- 1/2 cup finely chopped pecans
- 2 tbsp bourbon
- 1 tsp vanilla extract
Chocolate Coating
- 12 oz semi-sweet or dark chocolate
- 1 tbsp coconut oil or shortening (optional)
Garnish
- Whole or chopped dried cherries for garnish
Instructions
- Prepare the Filling: Beat the softened cream cheese and butter together until the mixture is smooth and creamy. Gradually add the powdered sugar, mixing continuously until the batter becomes thick and well combined. Stir in the finely chopped dried cherries, pecans, bourbon, and vanilla extract ensuring an even distribution of flavors.
- Chill and Shape: Place the mixture in the refrigerator for 1 hour to firm up, or alternatively freeze it for 20–30 minutes to speed up the process. Once firm, scoop tablespoon-sized portions and roll them into balls with your hands. Return the balls to the refrigerator and chill again for 20 minutes to set their shape.
- Melt the Chocolate: Gently melt the semi-sweet or dark chocolate using a double boiler or microwave in short bursts, stirring frequently to avoid burning. Stir in the optional coconut oil or shortening to create a smoother and shinier coating if desired.
- Coat the Balls: Dip each chilled cream cheese ball into the melted chocolate, ensuring it is fully covered. Place the dipped balls on parchment paper and immediately add a whole or chopped dried cherry on top for garnish before the chocolate sets.
- Set the Chocolate: Allow the chocolate coating to harden by leaving the balls at room temperature for 15–20 minutes, or refrigerate briefly. Once set, the cherry caramel extract balls are ready to serve or store for later enjoyment.
Notes
- For a boozy variation, increase the bourbon slightly, but be cautious as too much liquid can affect the consistency.
- Use full-fat cream cheese for the best texture and flavor.
- Coconut oil is optional but helps the chocolate coating to be smoother and shinier.
- Store leftover balls in an airtight container in the refrigerator for up to one week.
- Allow the balls to come to room temperature briefly before serving for the best taste experience.
