Ingredients
Scale
Protein & Vegetables
- 2.5 tbsp olive oil
- 1 lb ground turkey
- 1.5 tsp garlic, freshly minced
- 1/2 cup onions, diced
- 1/2 cup yellow pepper, diced
- 1.75 cups sweet potato, peeled and diced into 1/2-inch cubes
Seasonings & Toppings
- Salt, to taste
- Black pepper, to taste
- 1/4 tsp red chili flakes
- 1/2 tsp smoked paprika
- 3/4 cup mozzarella cheese, shredded
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the ingredients: Peel and dice the sweet potatoes into 1/2-inch cubes. Dice the onions and yellow pepper, and mince the garlic fresh for optimum flavor.
- Heat the skillet: Add 2.5 tablespoons of olive oil to a large skillet over medium heat until shimmering.
- Cook the ground turkey: Add the ground turkey to the skillet and cook, breaking it apart with a spoon or spatula until it’s browned and cooked through, about 5-7 minutes.
- Sauté the aromatics and vegetables: Add the minced garlic, diced onions, and yellow pepper to the cooked turkey. Stir frequently and cook until the onions are translucent, about 3-4 minutes.
- Add sweet potatoes and seasonings: Incorporate the diced sweet potatoes into the skillet along with salt, black pepper, red chili flakes, and smoked paprika. Stir well to combine all ingredients evenly.
- Cook until sweet potatoes are tender: Cover the skillet with a lid and cook over medium heat, stirring occasionally, until sweet potatoes soften, approximately 10-12 minutes. You may add a splash of water to help steam and soften the potatoes if needed.
- Add mozzarella cheese: Once the sweet potatoes are cooked, sprinkle shredded mozzarella evenly over the skillet mixture. Cover again and allow cheese to melt for 2-3 minutes.
- Garnish and serve: Remove from heat, sprinkle fresh chopped parsley on top, and serve hot. Enjoy your delicious and balanced skillet meal!
Notes
- To speed up cooking sweet potatoes, cut them into smaller cubes.
- Add a splash of chicken broth or water if the skillet mixture seems dry while cooking potatoes.
- For a spicy kick, increase red chili flakes to taste.
- This dish pairs well with a fresh green salad or crusty bread.
- Use part-skim mozzarella for a lower-fat option.
