Scale
Main Ingredients
- 2 cups long-grain rice
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) diced tomatoes
- 1 cup corn, frozen or canned
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat Olive Oil: Heat 2 tablespoons of olive oil in a large pan over medium heat until shimmering.
- Sauté Onion and Garlic: Add the chopped onion and minced garlic to the pan. Cook, stirring occasionally, until the onion is soft and translucent, about 3-4 minutes.
- Cook Rice with Spices: Stir in the long-grain rice, chili powder, and cumin. Cook for about 2 minutes, stirring frequently to toast the rice and spices, enhancing their flavor.
- Add Beans, Tomatoes, Corn, and Broth: Pour in the drained black beans, diced tomatoes with their juice, corn, and 2 cups of vegetable broth. Stir everything to combine evenly.
- Simmer Covered: Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for 20 minutes or until the rice is fully cooked and the liquid has been absorbed.
- Fluff and Garnish: Remove the pan from heat. Use a fork to fluff the rice gently, then garnish with freshly chopped cilantro before serving.
Notes
- Use vegetable broth to keep this dish vegetarian and add more flavor compared to water.
- If using frozen corn, no need to thaw before adding; canned corn should be drained.
- Adjust chili powder to your preferred spice level or add a pinch of cayenne for extra heat.
- To add protein, consider topping with shredded cheese, avocado slices, or a dollop of sour cream.
- This dish reheats well and is perfect for meal prep.
