Ingredients
Scale
Cookie Dough
- 1 cup olive oil
- 1/2 cup sugar
- 1/2 cup orange juice
- 1/4 cup brandy
- Zest of 1 orange
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1 tsp baking soda
- 1 tsp baking powder
- 4–4½ cups all-purpose flour
- 1 cup chopped walnuts
Syrup
- 1 cup honey
- 1 cup sugar
- 1 cup water
- 1 cinnamon stick
- 2–3 cloves
- A slice of lemon
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) to ensure it reaches the perfect temperature for baking the cookies evenly.
- Mix Wet Ingredients: In a large bowl, whisk together olive oil, sugar, orange juice, brandy, orange zest, ground cinnamon, and ground cloves until the mixture is smooth and well combined.
- Combine Dry Ingredients: In a separate bowl, mix baking soda and baking powder into 4 cups of all-purpose flour thoroughly to evenly distribute the leavening agents.
- Form Dough: Gradually add the dry flour mixture into the wet ingredients, kneading gently to create a soft dough. Add additional flour as necessary if the dough is too sticky, but avoid over-kneading to maintain tenderness.
- Shape Cookies: Take portions of dough and shape them into small oval cookies about 2 inches long, ensuring uniform size for even baking.
- Bake Cookies: Arrange the shaped cookies on a baking tray lined with parchment paper, then bake them in the preheated oven for 25 to 30 minutes or until they turn golden brown.
- Prepare Syrup: While cookies bake, combine honey, sugar, water, cinnamon stick, cloves, and lemon slice in a saucepan. Bring to a boil, then reduce heat and simmer gently for 10 minutes. Remove from heat and allow to cool slightly.
- Dip in Syrup: Once the cookies are baked and still warm, briefly dip each into the warm syrup for 10 to 15 seconds allowing them to soak up the flavors.
- Drain and Garnish: Let excess syrup drip off the cookies, then place them onto a serving platter and generously sprinkle with chopped walnuts for added crunch and flavor.
Notes
- Use fresh orange zest for the best citrus flavor.
- Do not over-knead the dough to keep cookies tender and soft.
- The syrup should be warm when dipping the cookies, not hot, to avoid breaking them apart.
- Allow the syrup-soaked cookies to cool and set before serving for optimal texture.
- Walnuts can be replaced with pecans or almonds for variation.
- Store cookies in an airtight container to maintain freshness.
