- 1 (12 oz) can evaporated milk
- 1 cup granulated sugar
- 3 large eggs
- 1 tablespoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 (15.25 oz) box yellow cake mix
- 1 cup unsalted butter, melted
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Prepare the filling: In a large bowl, whisk together the pumpkin puree, evaporated milk, sugar, eggs, pumpkin pie spice, and salt until smooth. Pour the mixture into the prepared baking dish.
- Add the cake mix: Sprinkle the dry yellow cake mix evenly over the pumpkin mixture. Do not stir.
- Add butter and pecans: Drizzle the melted butter evenly over the top of the cake mix. If using, sprinkle the chopped pecans on top for added crunch and flavor.
- Bake: Place in the preheated oven and bake for 50–60 minutes, or until the top is golden brown and set.
- Cool and serve: Allow the cake to cool for at least 20 minutes before serving. Serve warm or at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream.
Notes
- For a sweeter topping, sprinkle brown sugar on top before adding the butter.
- You can substitute the yellow cake mix with spice cake mix for extra fall flavor.
