Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced red onion and sauté for 5 minutes, until softened.
- Add the minced garlic and shredded purple cabbage. Cook for another 5 minutes, stirring frequently.
- Stir in the black beans, cumin, smoked paprika, chili powder, salt, and black pepper. Cook for 2 minutes to toast the spices.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat to low and simmer for 20–25 minutes, stirring occasionally.
- Use an immersion blender to partially blend the soup, leaving some chunks for texture. (Alternatively, transfer half the soup to a blender and blend until smooth, then return it to the pot.)
- Stir in the lime juice and taste for seasoning, adding more salt or pepper if needed.
- Serve hot, garnished with fresh cilantro and avocado slices if desired.
