  • 1 medium red onion, diced
  • 4 garlic cloves, minced
  • 1 cup purple cabbage, shredded
  • 2 (15 oz) cans black beans, rinsed and drained
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • Fresh cilantro, chopped (for garnish)
  • Avocado slices (optional, for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced red onion and sauté for 5 minutes, until softened.
  2. Add the minced garlic and shredded purple cabbage. Cook for another 5 minutes, stirring frequently.
  3. Stir in the black beans, cumin, smoked paprika, chili powder, salt, and black pepper. Cook for 2 minutes to toast the spices.
  4. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat to low and simmer for 20–25 minutes, stirring occasionally.
  5. Use an immersion blender to partially blend the soup, leaving some chunks for texture. (Alternatively, transfer half the soup to a blender and blend until smooth, then return it to the pot.)
  6. Stir in the lime juice and taste for seasoning, adding more salt or pepper if needed.
  7. Serve hot, garnished with fresh cilantro and avocado slices if desired.

Notes

  • For a creamier soup, add 1/2 cup coconut milk during the last 5 minutes of cooking.
  • This soup pairs well with tortilla chips or cornbread.
