Ingredients
Scale
Flatbread Base
- 2 6-inch flatbreads, or one 12-inch flatbread
Toppings
- 1 head roasted garlic
- 2 heaping tablespoons basil pesto, homemade or store-bought
- 1 to 1 1/2 cups shredded rotisserie or leftover chicken
- 1/2 cup shredded cheese, such as mozzarella or cheese blend
- 2 heaping tablespoons shredded Parmesan cheese
Garnish
- Fresh basil leaves, for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking the flatbreads evenly.
- Prepare Flatbread Base: Place the flatbreads directly onto a baking sheet to create a sturdy base for your toppings and allow for crispy edges.
- Add Toppings: Spread the roasted garlic evenly over each flatbread. Then spread one heaping tablespoon of basil pesto over each flatbread on top of the garlic. Distribute shredded chicken evenly, followed by sprinkling both mozzarella (or cheese blend) and Parmesan cheeses on top for a rich, cheesy layer.
- Bake: Place the baking sheet in the oven and bake the flatbreads for 8-12 minutes, until the cheese is melted, bubbly, and just beginning to brown, and the flatbread is heated through.
- Garnish and Serve: Remove from the oven, optionally garnish with fresh basil leaves for a pop of color and fresh flavor, then slice and serve immediately.
Notes
- You can use store-bought roasted garlic or roast your own by baking a whole head of garlic wrapped in foil at 400°F for about 30-40 minutes.
- Feel free to substitute the chicken with turkey or use a plant-based protein for variation.
- If using a 12-inch flatbread, you can prepare one large flatbread instead of two smaller ones.
- Homemade pesto adds freshness but store-bought pesto works well for convenience.
- For extra crispiness, place flatbreads directly on the oven rack instead of a baking sheet, just watch carefully to prevent burning.
