Ingredients

Scale
  • For the Roll-Ups:

    • 8 slices of sandwich bread (white or whole wheat)
    • 8 fully cooked breakfast sausage links
    • 2 large eggs
    • ¼ cup milk
    • ½ teaspoon vanilla extract
    • ½ teaspoon ground cinnamon
    • 1 tablespoon granulated sugar
    • 1 tablespoon butter (for cooking)

    For Serving:

    • Maple syrup
    • Powdered sugar (optional)

Instructions

  1. Prepare the Bread:

    • Trim the crusts off each slice of bread.
    • Use a rolling pin to flatten each slice.
  2. Add the Sausage:

    • Place one cooked sausage link at the edge of a flattened bread slice.
    • Roll it up tightly, sealing the edge with a little pressure.
  3. Prepare the Egg Mixture:

    • In a shallow bowl, whisk together eggs, milk, vanilla extract, cinnamon, and sugar.
  4. Coat the Roll-Ups:

    • Heat a non-stick skillet over medium heat and melt the butter.
    • Dip each roll-up into the egg mixture, coating all sides.
  5. Cook the Roll-Ups:

    • Place the roll-ups in the skillet, seam-side down.
    • Cook for about 2-3 minutes per side, turning until all sides are golden brown.
  6. Serve & Enjoy:

    • Remove from heat and serve warm with maple syrup for dipping.
    • Sprinkle with powdered sugar if desired.

Notes

  • Try using cinnamon raisin bread for extra flavor.
  • Swap out sausage for bacon or fruit for a different twist.
  • These roll-ups can be made ahead and reheated in the oven or air fryer for a quick breakfast.
  • Add a sprinkle of cinnamon sugar before serving for extra sweetness!
