Instructions
- Sauté Vegetables: In a skillet over medium heat, melt a bit of butter or heat oil. Add the thinly sliced onions and bell peppers, cooking until they become soft and caramelized, about 5-7 minutes. Remove from heat and set aside.
- Prepare Tortilla Wraps: Lay one flour tortilla flat on a clean surface. Spread a thin layer of horseradish sauce evenly over the tortilla. Layer the roast beef, followed by the sautéed onions and bell peppers. Finally, place a slice of Swiss cheese on top.
- Roll the Tortillas: Starting from one edge, tightly roll the tortilla around the filling, folding in the sides as you go to secure the ingredients inside. Repeat with the remaining tortillas and fillings.
- Toast the Rollups: Heat butter or oil in the same skillet over medium heat. Place the rollups seam-side down to seal, and toast each side for 2-3 minutes, or until they turn golden brown and crispy.
- Heat the Dipping Broth: In a small saucepan, warm the beef broth over medium heat until just simmering. Optionally, stir in Worcestershire sauce for enhanced flavor. Keep warm until serving.
- Serve: Slice each toasted rollup into bite-sized pieces. Arrange them on a serving platter with a small bowl of warm beef broth in the center for dipping. Enjoy immediately while warm.
