Instructions

  1. Roast Semolina: Heat a medium saucepan over medium-low heat. Add ghee and semolina, stirring continuously for 4 to 5 minutes until the semolina turns lightly golden and fragrant, which enhances its nutty flavor.
  2. Warm Liquid: In a separate pot, gently warm the water or vegetable broth until it reaches a gentle simmer.
  3. Combine & Cook: Slowly pour the hot liquid into the roasted semolina while stirring constantly to prevent lumps. Add salt and black pepper. Continue stirring for 3 to 4 minutes until the mixture becomes creamy and thickened.
  4. Sauté Spinach: In another pan, heat a little ghee or oil. Add the minced garlic (if using) and sauté briefly until fragrant. Add the chopped spinach and cook just until wilted to retain its bright color and nutrients.
  5. Soft-Boil Eggs: Boil the eggs in simmering water for 6 minutes to achieve soft yolks. Peel the eggs carefully and cut them in halves.
  6. Assemble and Serve: Spoon the creamy semolina porridge into serving bowls. Top each bowl with the sautéed spinach and halved soft-boiled eggs. Optionally, drizzle extra ghee on top for added richness.
