Description

This Savory Tourtière is a classic French-Canadian meat pie featuring a savory blend of ground pork and beef seasoned with warm spices like cinnamon, cloves, and nutmeg, all encased in flaky puff pastry. Perfect for family dinners or holiday gatherings, this comforting dish combines rich flavors and a crisp, golden crust.

Ingredients

Scale

Meat Filling

  • 1 lb pork shoulder, ground
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cinnamon
  • ½ tsp cloves
  • ½ tsp nutmeg
  • Salt and pepper to taste

Pastry

  • 1 package (17.3 oz) puff pastry (2 sheets)
  • 1 egg (for wash), beaten with 1 tbsp water

Instructions

  1. Sauté Aromatics: In a large skillet over medium heat, sauté chopped onions and minced garlic until they become translucent and fragrant, about 5 minutes.
  2. Cook Meat: Add the ground pork shoulder and lean ground beef to the skillet and cook, stirring occasionally, until the meat is browned and cooked through.
  3. Season and Simmer: Stir in cinnamon, cloves, nutmeg, salt, and pepper. Reduce heat and let the mixture simmer gently for 10 minutes to deepen the flavors.
  4. Preheat Oven and Prepare Pastry Base: Preheat your oven to 375°F (190°C). Roll out one sheet of puff pastry and press it into a pie dish, creating an even base for the filling.
  5. Fill Pie: Spoon the meat mixture evenly over the pastry base, spreading it out smoothly.
  6. Cover and Seal: Lay the second sheet of puff pastry over the meat filling. Seal the edges by crimping them firmly to enclose the filling completely.
  7. Apply Egg Wash and Vent: Brush the top pastry layer with the beaten egg wash to encourage browning and shine. Cut slits on top to allow steam to escape during baking.
  8. Bake: Place the pie in the preheated oven and bake for 30-35 minutes until the pastry turns golden brown and crisp.
  9. Cool and Serve: Remove the tourtière from the oven and allow it to cool slightly before slicing and serving.

Notes

  • For extra flavor, you can add a splash of maple syrup or a touch of allspice to the meat mixture.
  • Make sure the puff pastry is well chilled before rolling to prevent it from becoming difficult to handle.
  • Allow the tourtière to cool for 5-10 minutes after baking to let the filling set and make slicing easier.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven to maintain crispiness.
