Ingredients

Scale

Main Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 yellow bell pepper, diced
  • 1/2 red onion, sliced
  • 1 jalapeno, minced into a small dice
  • Salt & pepper, to taste
  • 1 cup canned tomatoes (can use fresh)
  • 1 cup black beans
  • 1 tablespoon cumin
  • 2 teaspoons garlic powder
  • 1/4 cup cilantro, chopped
  • 4 large eggs
  • 1 avocado, sliced
  • Extra cilantro, for garnish
  • Olive oil, for cooking

Instructions

  1. Cook Sweet Potatoes: Heat olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes and cook, turning regularly, until they are browned and softened. This step creates the hearty base of the hash.
  2. Add Vegetables: Add the sliced red onions, diced yellow bell pepper, and minced jalapeno to the skillet. Continue cooking for about 5 minutes, stirring occasionally, until the vegetables are tender and the sweet potatoes have a nice browned exterior. Season with salt and pepper to taste.
  3. Add Beans, Tomatoes & Spices: Stir in the canned tomatoes, black beans, cumin, and garlic powder. Mix well to combine all ingredients evenly. Immediately add the chopped cilantro and stir through the hash, allowing the flavors to meld.
  4. Cook Eggs: In a separate small pan or the same skillet if space allows, fry the eggs to your preferred doneness.
  5. Serve: Spoon the sweet potato hash into bowls or onto plates. Top each serving with a fried egg, fresh slices of avocado, and extra cilantro for garnish. Serve immediately to enjoy the best textures and flavors.

Notes

  • You can substitute canned tomatoes with fresh diced tomatoes if desired.
  • Add onion powder alongside garlic powder for extra depth of flavor.
  • Adjust jalapeno quantity based on your preferred spice level.
  • For a vegan option, omit the eggs and substitute with tofu or skip the topping entirely.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in a skillet.
