  • 1 box strawberry cake mix (about 15.25 oz)
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup shredded sweetened coconut
  • 1 cup white chocolate chips
  • 1 ½ cups fresh strawberries, diced
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large mixing bowl, prepare the strawberry cake mix according to the package instructions by combining the cake mix, water, oil, and eggs. Stir until smooth.
  3. Sprinkle the shredded coconut and white chocolate chips evenly across the bottom of the greased pan.
  4. Pour the strawberry cake batter over the coconut and white chocolate chips.
  5. In a separate bowl, beat the softened cream cheese, melted butter, powdered sugar, and vanilla extract until smooth.
  6. Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife to gently swirl it into the batter.
  7. Evenly distribute the diced strawberries on top of the cake.
  8. Bake for 40–45 minutes, or until the center is set and the top has a crackled appearance. The cake will appear “earthquake-like” with cracks and pockets of cream cheese throughout.
  9. Allow the cake to cool for 15–20 minutes before serving. Serve warm or at room temperature.

Notes

  • For a sweeter cake, sprinkle extra white chocolate chips on top before baking.
