Description

This light and fluffy Strawberry Mousse is a delightful dessert made with fresh strawberries and cream cheese or coconut cream for a dairy-free alternative. It’s subtly sweetened and can be enhanced with yogurt and vanilla for extra creaminess and flavor. Perfectly chilled, this mousse offers a smooth texture with a fresh fruity taste, ideal for a quick and elegant treat.

Ingredients

Scale

Strawberry Base

  • 1 ½ cups fresh strawberries, hulled

Cream Base

  • 8 oz cream cheese, softened (or 1 cup thick coconut cream for dairy-free/vegan option)
  • 1/4 cup sweetener of choice (powdered sugar, monk fruit/allulose blend, erythritol, or powdered xylitol for sugar-free)
  • Optional: 1/4 cup plain or Greek yogurt
  • Optional: 1 tsp vanilla bean paste

Instructions

  1. Prepare Ingredients: Read through the recipe instructions carefully and gather all ingredients so they are ready to use.
  2. Soften Cream Base: If using cream cheese, let it come to room temperature to ensure smooth blending. For coconut cream, open the can and check that the cream is thick and creamy without flaky parts.
  3. Puree Strawberries: Remove the strawberry stems and puree the berries in a blender until smooth. Alternatively, mash them by hand if you prefer a chunkier texture.
  4. Combine Ingredients: Add the softened cream cheese or coconut cream, chosen sweetener, optional yogurt, and vanilla bean paste to the blender or mixing bowl with the pureed strawberries.
  5. Whip Mixture: Using a food processor, hand mixer, or blender, whip the mixture until stiff peaks form. This creates the airy mousse texture. A fork can be used but will result in a denser consistency.
  6. Portion and Chill: Transfer the mousse into serving glasses, bowls, or cups. Chill the mousse in the refrigerator for at least 1 hour until it thickens and sets for the best texture.

Notes

  • To make this recipe vegan or dairy-free, substitute cream cheese with thick coconut cream.
  • Adjust the sweetness according to taste and dietary preferences using various sweeteners.
  • The mousse can be stored in the refrigerator for up to 2 days for optimal freshness.
  • Adding yogurt is optional but can add a slight tang and creaminess to the dessert.
  • For a textured mousse, mash the strawberries instead of blending completely.
