Dry Ingredients
- 1/3 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Toppings
- 1/4 cup chocolate chips (preferably dark chocolate)
Instructions
- Preheat Oven: Preheat your oven to 350ยฐF (175ยฐC) and line an 8×8 inch baking dish with parchment paper, leaving an overhang on two sides to allow easy lifting of the brownies after baking.
- Mix Wet Ingredients: In a large bowl, whisk together the mashed sweet potatoes, peanut butter, brown sugar, oil, and vanilla extract until the mixture is smooth and well combined.
- Combine Dry Ingredients: In a separate smaller bowl, whisk the all-purpose flour, cocoa powder, baking powder, and salt until evenly mixed.
- Incorporate Dry into Wet: Gradually add the dry ingredients to the wet ingredients, whisking continuously until the batter is smooth and uniformly mixed without lumps.
- Prepare for Baking: Pour the brownie batter into the prepared baking dish and smooth the top with a spatula. Evenly sprinkle the chocolate chips over the batter.
- Bake: Place the dish in the preheated oven and bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool and Serve: Let the brownies cool completely in the pan for at least 30 minutes to set before lifting them out using the parchment paper overhang. Cut into 9 squares and enjoy!
Notes
- Make sure the mashed sweet potatoes are well cooked and mashed smoothly to ensure a good texture for the brownies.
- You can substitute peanut butter with any other nut or seed butter of your choice.
- Use firm brown sugar for better moisture and taste.
- To enhance the chocolate flavor, use high-quality cocoa powder and dark chocolate chips.
- If you prefer a less sweet brownie, reduce the brown sugar slightly.
