Instructions
- Prepare Ingredients: Peel and dice the sweet potatoes into ½-inch cubes to ensure even cooking. Finely chop the onion and dice the bell pepper into small, uniform pieces for quick and even sautéing.
- Cook the Sweet Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes, then sprinkle smoked paprika, garlic powder, salt, and pepper over them. Stir well to evenly coat the potatoes with the seasonings. Cook for 10–12 minutes, stirring occasionally, until the sweet potatoes turn golden brown and are tender when pierced with a fork.
- Add Vegetables: Push the cooked sweet potatoes to one side of the skillet to make room. Add the remaining tablespoon of olive oil to the empty side, then toss in the chopped onion and bell pepper. Cook for 5–7 minutes until the vegetables soften and develop slight caramelization, stirring occasionally.
- Combine and Create Egg Wells: Stir the vegetables and sweet potatoes together in the skillet to distribute evenly. Use a spoon to create four small wells in the hash mixture, where the eggs will be cooked.
- Cook the Eggs: Crack one egg into each well. Cover the skillet with a lid and reduce the heat to low. Let the eggs cook for 3–5 minutes, or until the egg whites are set while the yolks remain runny. For firmer yolks, cook for a few additional minutes.
