Description

This Taco Rice Bowl is a delicious and easy-to-make meal that combines seasoned ground beef with vegetables, beans, and rice. Topped with fresh ingredients like shredded lettuce, cheddar cheese, avocado, and salsa, it offers a flavorful and satisfying dish perfect for weeknight dinners.

Ingredients

Scale

Meat and Base

  • 1 lb ground beef (or turkey, chicken, or vegetarian crumbles)
  • 1 tbsp olive oil
  • 2 cups cooked rice

Vegetables and Beans

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained

Seasonings

  • 1 packet taco seasoning
  • 1 cup water
  • 1 tsp chili powder (optional)
  • 1/2 tsp cumin (optional)
  • Salt and pepper to taste

Toppings

  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream or Greek yogurt
  • 1 avocado, diced
  • Your favorite salsa
  • Chopped cilantro (optional)
  • Lime wedges (optional)

Instructions

  1. Brown the Meat: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off excess grease to keep the dish from being too oily.
  2. Sauté the Onion: Add chopped onion to the skillet and cook until softened, about 3-5 minutes, stirring occasionally to ensure even cooking.
  3. Add Garlic: Stir in minced garlic and cook for 1 minute until fragrant, enhancing the flavor base of the dish.
  4. Combine Ingredients: Add the undrained diced tomatoes, rinsed black beans, drained corn, taco seasoning, water, and optional chili powder and cumin. Stir well to combine all ingredients evenly.
  5. Simmer: Bring the mixture to a simmer, then reduce heat to low. Cover the skillet and let it simmer for 10-15 minutes until the sauce thickens. Season with salt and pepper to taste.
  6. Prepare Bowls: Scoop cooked rice into each serving bowl as the base for the taco mixture.
  7. Add Taco Meat: Spoon a generous portion of the seasoned taco meat and vegetable mixture over the rice in each bowl.
  8. Add Toppings: Top with shredded lettuce, cheddar cheese, sour cream or Greek yogurt, and diced avocado to add layers of texture and flavor.
  9. Finish with Salsa and Cilantro: Add your favorite salsa on top and garnish with chopped cilantro if desired for a fresh, bright touch.
  10. Serve: Serve immediately with lime wedges on the side for squeezing, adding a zesty finish to the dish.

Notes

  • You can substitute ground beef with ground turkey, chicken, or vegetarian meat crumbles for a different protein option.
  • Adjust chili powder and cumin according to your heat and flavor preference.
  • Use Greek yogurt as a healthier alternative to sour cream.
  • Leftovers can be refrigerated in an airtight container for up to 3 days.
  • Add jalapeños or hot sauce for extra spice if desired.
