Instructions

  1. Cook the Sausage and Onion: Crumble the sausage into a Dutch oven, and add the chopped onion. Cook and stir over medium heat until the meat is no longer pink, about 5 to 7 minutes. Add the minced garlic and cook for an additional minute to release its aroma.
  2. Add Broth, Water, and Tomatoes: Stir in the reduced-sodium chicken broth, water, and undrained diced tomatoes. Bring the mixture to a boil, ensuring all ingredients are well combined.
  3. Cook the Tortellini: Add the refrigerated cheese tortellini to the boiling soup. Return to a boil and cook for 5 to 8 minutes, stirring occasionally, until the tortellini are almost tender.
