Ingredients
Scale
Meat and Vegetables
- 3/4 pound Italian turkey sausage links, casings removed
- 1 medium onion, chopped
- 6 garlic cloves, minced
- 1 package (6 ounces) fresh baby spinach, coarsely chopped
Liquids and Canned Goods
- 2 cans (14-1/2 ounces each) reduced-sodium chicken broth
- 1-3/4 cups water
- 1 can (14-1/2 ounces) diced tomatoes, undrained
Pasta and Seasonings
- 1 package (9 ounces) refrigerated cheese tortellini
- 2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
- 1/4 teaspoon pepper
- Dash crushed red pepper flakes
- Shredded Parmesan cheese, optional
Instructions
- Cook the Sausage and Onion: Crumble the sausage into a Dutch oven, and add the chopped onion. Cook and stir over medium heat until the meat is no longer pink, about 5 to 7 minutes. Add the minced garlic and cook for an additional minute to release its aroma.
- Add Broth, Water, and Tomatoes: Stir in the reduced-sodium chicken broth, water, and undrained diced tomatoes. Bring the mixture to a boil, ensuring all ingredients are well combined.
- Cook the Tortellini: Add the refrigerated cheese tortellini to the boiling soup. Return to a boil and cook for 5 to 8 minutes, stirring occasionally, until the tortellini are almost tender.
- Finish with Spinach and Seasonings: Reduce heat to low. Add the fresh baby spinach, basil, pepper, and crushed red pepper flakes. Cook for 2 to 3 minutes longer, or until the spinach is wilted and the tortellini are fully tender. Serve warm with shredded Parmesan cheese if desired.
Notes
- For a richer flavor, substitute additional chicken broth for the water.
- Removing the sausage casings results in a crumbly texture that blends better with the soup.
- You can use fresh or dried basil depending on availability.
- Adjust the crushed red pepper flakes quantity to suit your preferred level of spiciness.
- Shredded Parmesan cheese adds a nice finishing touch but is optional.
